Description

A hearty and easy Pancake Beef Sausage Casserole that combines fluffy pancakes, savory beef sausage, and melted cheese for a delicious breakfast or brunch.


Ingredients

  • 1 box pancake mix (prepared according to package directions)
  • 1 lb ground beef sausage
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1/2 cup milk
  • 1/4 cup chopped onion (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Prepare the pancake batter according to the box instructions for your pancake mix.
  3. In a skillet, cook the ground beef sausage over medium heat until browned. Drain off any excess grease. If using, add the chopped onion and cook until softened.
  4. In a separate bowl, whisk together the eggs and milk. Season with salt and pepper.
  5. Spread half of the prepared pancake batter into the bottom of the greased baking dish.
  6. Layer the cooked beef sausage over the pancake batter.
  7. Sprinkle half of the shredded cheddar cheese over the sausage.
  8. Pour the egg and milk mixture evenly over the sausage and cheese.
  9. Top with the remaining pancake batter.
  10. Sprinkle the remaining cheddar cheese over the top.
  11. Bake for 30-35 minutes, or until the casserole is set and the cheese is melted and lightly browned.
