- 3 medium Shallots
- 20 to 25 cloves Whole Garlic Cloves
- 1 small bunch Fresh Thyme
- 3 to 4 sprigs Fresh Rosemary
- 1/4 cup Avocado or Olive Oil
- 1/2 cup Chicken Broth
- 1/2 cup White Wine
Instructions
- Preheat your oven to 425°F (220°C).
- Season the chicken generously with sea salt and ground black pepper.
- Arrange the shallots, whole garlic cloves, fresh thyme, and rosemary in a large roasting pan.
- Drizzle the avocado or olive oil over the chicken and the vegetables.
- Pour the chicken broth and white wine into the pan, surrounding the chicken with liquid.
- Roast in the oven for 60 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
