Ingredients

  • Salt
  • Freshly ground black pepper
  • Chili
  • Cayenne pepper
  • 1 tablespoon Olive oil
  • ¼ lemon, only the juice
  • 5.3 oz Cherry tomatoes (about ¾ cup)
  • 3 cloves garlic
  • 1 zucchini
  • red bell pepper
  • Oregano
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 350°F.
  2. Clean and slice all vegetables and season with salt, pepper, oregano, and olive oil. Spread on a baking sheet.
  3. Wash and pat dry salmon fillets. Season with salt, black pepper, chili, and cayenne pepper.
  4. Drizzle lemon juice and olive oil over salmon. Place fillets among vegetables on the tray.
  5. Bake for 15–20 minutes or until salmon is flaky and vegetables are tender but crisp.
  6. Remove from oven, let rest, and serve hot.
