- 1.1 lbs Salmon fillets
- Salt
- Freshly ground black pepper
- Chili
- Cayenne pepper
- 1 tablespoon Olive oil
- ¼ lemon, only the juice
- 5.3 oz Cherry tomatoes (about ¾ cup)
- 3 cloves garlic
- 1 zucchini
- ⅔ red bell pepper
- Oregano
- 1 tablespoon olive oil
Instructions
- Preheat oven to 350°F.
- Clean and slice all vegetables and season with salt, pepper, oregano, and olive oil. Spread on a baking sheet.
- Wash and pat dry salmon fillets. Season with salt, black pepper, chili, and cayenne pepper.
- Drizzle lemon juice and olive oil over salmon. Place fillets among vegetables on the tray.
- Bake for 15–20 minutes or until salmon is flaky and vegetables are tender but crisp.
- Remove from oven, let rest, and serve hot.
