  • 23 medium-large onions (about 3 cups), sliced into half moons
  • 1/2 teaspoon sea salt, plus an additional 1/4 teaspoon
  • 1/2 cup water, for deglazing
  • 23 cloves garlic, minced
  • 1 cup sour cream
  • 1/2 cup Greek yogurt
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon coarse black pepper
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • Optional: Everything bagel seasoning, for garnish

Instructions

  1. Slice onions into uniform half-moons. Heat avocado oil in a large skillet over medium heat. Add onions and 1/2 teaspoon sea salt. Cook, stirring occasionally, for 10-15 minutes until softened and translucent.
  2. Reduce heat to medium-low and continue cooking for 30-40 minutes, stirring every 5-10 minutes, until onions are deep golden brown and tender.
  3. Pour 1/2 cup water into the skillet to deglaze. Scrape the bottom of the pan to loosen browned bits. Simmer until water mostly evaporates, creating a concentrated onion paste.
  4. Add minced garlic to the skillet with the onions and cook for about 1 minute until fragrant. Remove from heat. Stir in the remaining 1/4 teaspoon sea salt, Worcestershire sauce, onion powder, and black pepper.
  5. In a medium bowl, combine sour cream and Greek yogurt. Add the cooled caramelized onion mixture and fold gently. Stir in fresh parsley and chives.
  6. Cover and refrigerate for at least 1 hour (preferably 2-3 hours) to allow flavors to meld. Garnish with everything bagel seasoning if desired before serving.
