Description

This One Pot Marry Me Shrimp and Orzo is a rich, creamy Tuscan-inspired seafood dinner made with juicy shrimp, tender orzo, sun-dried tomatoes, and a garlic-Parmesan cream sauce.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound raw shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup orzo pasta
  • 2 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 cups fresh spinach or baby kale (optional)
  • Optional garnish: fresh basil or parsley

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season shrimp with salt and pepper and cook 1–2 minutes per side until pink. Remove and set aside.
  2. In the same pan, add garlic and red pepper flakes. Cook 30 seconds until fragrant.
  3. Stir in sun-dried tomatoes and orzo. Toast for 1–2 minutes.
  4. Add broth, heavy cream, and Italian seasoning. Bring to a simmer.
  5. Cover and cook 8–10 minutes, stirring occasionally, until orzo is tender.
  6. Stir in Parmesan and spinach until wilted.
  7. Return shrimp to the pan and toss gently until creamy and heated through.
  8. Garnish with fresh herbs and extra cheese if desired.
