Description
This One-Pot Chicken Burrito Bowl is a quick and easy meal that combines tender cooked chicken, rice, beans, corn, and flavorful seasonings all cooked together in one skillet.

- 1/2 red bell pepper, chopped
- 1/2 sweet yellow onion, chopped
- 2 cups cooked chicken, chopped
- 1 cup white rice
- 1 (15oz) can black beans, drained and rinsed
- 1 (15oz) can corn, drained
- 1 (4oz) can green chilies
- 1 tablespoon oil (for cooking)
- 1/2 cup salsa
- 2 cups chicken broth
- 3 tablespoons taco seasoning
- 1–2 cups shredded cheddar cheese
Instructions
- Warm a large, deep skillet over medium heat and add 1 tablespoon of cooking oil.
- Add the chopped red bell pepper, sweet onion, and white rice to the skillet. Cook for 2 to 5 minutes, stirring occasionally.
- Stir in the chopped cooked chicken, salsa, chicken broth, black beans, corn, green chilies, and taco seasoning.
- Bring the mixture to a gentle simmer, then reduce the heat to low. Cover and cook for 20 to 25 minutes.
- Once the rice is cooked through, sprinkle the shredded cheddar cheese over the top and stir gently until melted. Serve immediately.
