  • 1/2 sweet yellow onion, chopped
  • 2 cups cooked chicken, chopped
  • 1 cup white rice
  • 1 (15oz) can black beans, drained and rinsed
  • 1 (15oz) can corn, drained
  • 1 (4oz) can green chilies
  • 1 tablespoon oil (for cooking)
  • 1/2 cup salsa
  • 2 cups chicken broth
  • 3 tablespoons taco seasoning
  • 12 cups shredded cheddar cheese

Instructions

  1. Warm a large, deep skillet over medium heat and add 1 tablespoon of cooking oil.
  2. Add the chopped red bell pepper, sweet onion, and white rice to the skillet. Cook for 2 to 5 minutes, stirring occasionally.
  3. Stir in the chopped cooked chicken, salsa, chicken broth, black beans, corn, green chilies, and taco seasoning.
  4. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover and cook for 20 to 25 minutes.
  5. Once the rice is cooked through, sprinkle the shredded cheddar cheese over the top and stir gently until melted. Serve immediately.
