- 2 cups chopped bell peppers
- 1 large zucchini
- 1 red onion
- 1 cup cherry tomatoes
- ½ cup Kalamata olives
- 3 tablespoon olive oil
- 1 tablespoon dried oregano
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup crumbled feta cheese (optional)
Instructions
- Preheat your oven to 425°F and line a large rimmed baking sheet with parchment paper.
- Combine all the chopped vegetables in a large mixing bowl.
- Drizzle the olive oil over the vegetables and sprinkle with oregano, garlic powder, salt, and black pepper.
- Spread the seasoned vegetables in a single layer on your prepared baking sheet.
- Bake for 20-25 minutes, stirring once halfway through.
