Description
This flavorful one-pan dish combines seasoned chicken thighs with rice, vegetables, and spices for a hearty meal. It’s easy to prepare and perfect for a weeknight dinner.

- 4 pieces boneless (skinless chicken thighs)
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 medium onion (diced)
- 1 piece bell pepper (diced)
- 3 cloves garlic (minced)
- 1 cup long-grain white rice
- 2 ½ cups chicken broth
- 1 can diced tomatoes (drained)
- 1 cup frozen peas
- 1 teaspoon smoked paprika
- to taste salt
- to taste pepper
- to garnish fresh parsley (chopped)
Instructions
- Coat chicken thighs with Cajun seasoning and marinate for 15 minutes.
- Heat olive oil in a large skillet over medium-high heat and sear chicken for 4-5 minutes on each side.
- Remove chicken and set aside. In the same pan, sauté onion and bell pepper for 3-4 minutes.
- Add minced garlic and cook for an additional minute.
- Stir in rice, then add chicken broth, diced tomatoes, smoked paprika, salt, and pepper. Bring to a simmer.
- Return chicken to the pan, cover, and reduce heat to low. Simmer for 20-25 minutes.
- In the last 5 minutes, sprinkle frozen peas over the dish and cover.
- Remove from heat, let sit for a couple of minutes, and garnish with parsley before serving.
