One Pan Cajun Chicken: A Spicy Delight for Dinner

Description

This flavorful one-pan dish combines seasoned chicken thighs with rice, vegetables, and spices for a hearty meal. It’s easy to prepare and perfect for a weeknight dinner.


Ingredients

  • 4 pieces boneless (skinless chicken thighs)
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 medium onion (diced)
  • 1 piece bell pepper (diced)
  • 3 cloves garlic (minced)
  • 1 cup long-grain white rice
  • 2 ½ cups chicken broth
  • 1 can diced tomatoes (drained)
  • 1 cup frozen peas
  • 1 teaspoon smoked paprika
  • to taste salt
  • to taste pepper
  • to garnish fresh parsley (chopped)

Instructions

  1. Coat chicken thighs with Cajun seasoning and marinate for 15 minutes.
  2. Heat olive oil in a large skillet over medium-high heat and sear chicken for 4-5 minutes on each side.
  3. Remove chicken and set aside. In the same pan, sauté onion and bell pepper for 3-4 minutes.
  4. Add minced garlic and cook for an additional minute.
  5. Stir in rice, then add chicken broth, diced tomatoes, smoked paprika, salt, and pepper. Bring to a simmer.
  6. Return chicken to the pan, cover, and reduce heat to low. Simmer for 20-25 minutes.
  7. In the last 5 minutes, sprinkle frozen peas over the dish and cover.
  8. Remove from heat, let sit for a couple of minutes, and garnish with parsley before serving.
