- For the Pie Crust:
- 1 1/4 cups all-purpose flour
- 1/2 tsp salt
- 1/2 cup unsalted butter, chilled and cut into cubes
- 3–4 tbsp ice water
- For the Chocolate Filling:
- 1 cup granulated sugar
- 1/3 cup unsweetened cocoa powder
- 1/4 cup cornstarch
- 1/4 tsp salt
- 4 large egg yolks
- 2 1/2 cups whole milk
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- For the Whipped Cream (optional):
- 1 cup heavy cream, chilled
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
Instructions
- Prepare the Pie Crust: In a large mixing bowl, whisk together the flour and salt. Add the chilled butter cubes and blend until the mixture resembles coarse crumbs.
- Gradually add ice water, mixing with a fork until the dough holds together when pinched. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat your oven to 375°F (190°C). Roll out the chilled dough into a circle about 12 inches in diameter. Transfer to a 9-inch pie dish, trim, and crimp edges. Prick the bottom and sides with a fork.
- Line the crust with parchment paper or foil, fill with weights, and bake for 15 minutes. Remove weights and bake for an additional 10-12 minutes until golden brown. Let cool completely.
- Make the Chocolate Filling: In a saucepan, whisk together sugar, cocoa powder, cornstarch, and salt. In a separate bowl, whisk egg yolks and milk until smooth. Gradually whisk into the cocoa mixture.
- Cook over medium heat, stirring constantly, until thickened and boiling, about 5-7 minutes. Remove from heat, stir in butter and vanilla until smooth.
- Pour the chocolate filling into the cooled crust. Cover with plastic wrap and refrigerate for at least 4 hours until set.
- Make the Whipped Cream (optional): Whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
- To Serve: Remove plastic wrap from the pie. Spread or pipe whipped cream over the top if desired. Slice and serve chilled.
