- 1 pound ground beef (80/20 blend)
- 2 large yellow onions, thinly sliced
- 4 soft hamburger buns
- 4 slices American cheese
- 1 tablespoon unsalted butter
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 8 pickle slices (optional)
- 2 tablespoons yellow mustard (optional)
- 2 tablespoons mayonnaise (optional)
Instructions
- Thinly slice the onions and separate the rings.
- Divide ground beef into 4 loose portions and shape gently into balls.
- Preheat a cast-iron skillet or griddle over medium-high heat until very hot.
- Place beef on skillet, top with onions, and smash firmly to 1/4 inch thickness.
- Season with salt and pepper and cook 2–3 minutes until crust forms.
- Flip carefully and cook another 1–2 minutes until onions caramelize.
- Top with American cheese and allow to melt.
- Butter and toast buns until golden.
- Assemble burgers with toppings and serve immediately.
