- 1 cup milk (any type of milk is acceptable)
- 1/2 cup honey (or maple syrup for a vegan option)
- 4 ounces goat cheese (swap with cream cheese if unavailable)
- 1/4 cup raspberry or blackberry jam (or fresh fruit)
- 1/4 cup lemon curd (store-bought or homemade)
- 1/4 cup toasted almonds (or omit for nut-free)
- 1 tablespoon fresh rosemary (or thyme for a different herb)
Instructions
- In a medium saucepan, combine 1 cup heavy cream, 1 cup milk, and ½ cup honey. Heat over medium heat until warm but not boiling (about 5 minutes). Stir frequently.
- Once warm, add 4 ounces of goat cheese, stirring continuously until it melts and the mixture is smooth.
- Pour the mixture into a Ninja Creami pint container, smoothing the surface, cover with a lid, and freeze for at least 24 hours.
- After freezing, let the container sit at room temperature for 5-10 minutes. Secure the container in your Ninja Creami machine, select the ‘Ice Cream’ setting and process for about 2-3 minutes.
- Create a small well in the processed ice cream, spoon in ¼ cup raspberry or blackberry jam, ¼ cup lemon curd, ¼ cup toasted almonds, and 1 tablespoon fresh rosemary. Select the ‘Re-spin’ option to blend.
- For a firmer texture, refreeze for 1-2 hours or serve immediately. Optionally, drizzle more honey on top and serve garnished with extra toasted almonds and fresh berries.
