- 6 strips bacon
- 1/2 yellow onion, finely diced
- 1 1/2 cups button mushrooms, chopped
- 3 cloves garlic, minced
- 2 (10.5-ounce) cans cream of mushroom soup
- 1/4 cup milk
- 1 cup shredded Monterey Jack cheese
- Salt and freshly ground black pepper, to taste
- 4 (14.5-ounce) cans cut green beans, drained
- 1 1/2 cups French fried onions
Instructions
- Preheat your oven to 350°F. Lightly coat a 9×13-inch baking dish with nonstick cooking spray to prevent sticking.
- In a large skillet, cook the bacon over medium-low heat until it is crisp. Remove the cooked bacon and place it on paper towels to drain excess fat, then crumble it into small pieces. Drain all but approximately 2 tablespoons of the rendered bacon grease from the skillet, then return the pan to medium heat. Add the finely diced yellow onion and cook, stirring occasionally, for about 5 minutes until it becomes translucent.
- Add the chopped mushrooms to the skillet and cook, stirring occasionally, for about 5 minutes until they achieve a golden brown color. Stir in the minced garlic and cook for an additional minute, or until it becomes fragrant. Incorporate the undiluted cream of mushroom soup and the crumbled bacon, stirring well to combine. Next, stir in the milk and shredded Monterey Jack cheese, continuing to stir until the cheese is completely melted and smooth. Season the mixture with salt and freshly ground black pepper to your taste. Gently fold in the drained cut green beans until they are thoroughly combined with the sauce.
- Pour the prepared green bean mixture into the greased 9×13-inch baking dish. Evenly spread the French fried onions over the top of the casserole. Bake, uncovered, for 30 minutes, or until the casserole is bubbling vigorously and heated through.
