  • 3 cups cooked chicken, shredded or cubed (rotisserie or leftover baked chicken)
  • 8 ounces egg noodles
  • 1/2 cup (115g) unsalted butter
  • 1/2 cup (60g) all-purpose flour
  • 3 cups (720ml) whole milk or 2%
  • 1 cup (240g) sour cream
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups (200g) shredded sharp cheddar cheese
  • 1 cup (50g) French fried onions
  • Salt and pepper to taste
  • Optional: 1/2 cup frozen peas or mushrooms

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Bring a large pot of salted water to a boil. Cook egg noodles according to package instructions until al dente (7-9 minutes). Drain and rinse under cold water. Set aside.
  3. In a medium saucepan, melt 1/2 cup butter over medium heat. Add chopped onion and sauté until translucent, about 3 minutes. Add minced garlic and cook for 1 more minute.
  4. Sprinkle 1/2 cup flour over the butter, onion, and garlic mixture. Stir constantly for 2 minutes to cook the flour.
  5. Slowly pour in 3 cups milk while stirring to avoid lumps. Bring to a gentle simmer, stirring often, until thickened (about 5 minutes). Remove from heat.
  6. Stir in 1 cup sour cream, 2 cups shredded cheddar cheese, salt, and pepper until cheese melts and sauce is smooth.
  7. In a large mixing bowl, combine cooked noodles, shredded chicken, and creamy cheese sauce. Fold in peas or mushrooms if using.
  8. Pour mixture into prepared baking dish and spread evenly. Top with 1 cup French fried onions, pressing gently.
  9. Bake uncovered for 30-35 minutes until bubbly and golden brown on top. Optional: broil for last 2 minutes for extra crispy topping, watching closely.
  10. Let casserole cool for 10 minutes before serving to set and make slicing easier.
