Nando’s Portuguese Chicken and Rice is a flavorful one-pot meal that brings vibrant Portuguese flavors home, perfect for busy weeknights.

- 1.5 lbs Skinless Boneless Chicken Thighs
- 1 tbsp Paprika (sweet or regular)
- 1 tsp Garlic Powder (or fresh garlic)
- 1 tsp Dried Oregano
- 1 tsp Coriander
- 0.5 tsp Cayenne Pepper (optional)
- 1 tbsp Brown Sugar
- 1 tsp Cooking Salt (Kosher preferred)
- 2 tbsp Extra Virgin Olive Oil
- 2 tbsp Lemon Juice (or Apple Cider Vinegar)
- 1 medium Onion (chopped)
- 1 medium Red Capsicum (Bell Pepper) (diced)
- 1 cup Basmati Rice
- 1 tsp Turmeric Powder
- 2 cups Low-Sodium Chicken Stock
- 1 cup Frozen Peas (optional)
- to taste Perinaise or Hot Sauce
- 2 tbsp Green Onion (chopped)
Instructions
- In a large bowl, combine paprika, garlic powder, dried oregano, coriander, cayenne pepper, brown sugar, and kosher salt. Coat the chicken thighs thoroughly and let rest.
- Heat olive oil in a large pot over medium-high heat and sear the chicken thighs for about 5 minutes until golden brown, then set aside.
- In the same pot, add chopped onion and cook for 2-3 minutes until translucent. Stir in minced garlic and diced red capsicum, cooking for another 2-3 minutes until fragrant.
- Add basmati rice and stir to coat. Pour in chicken stock, turmeric powder, and frozen peas, if using. Nestle seared chicken on top.
- Bring the mixture to a light simmer. Cover and cook on low heat for 15 minutes.
- Remove from heat and let sit covered for 10 minutes to fluff the rice. Serve with garnishes.
