  • 2 cups Fresh Spinach, rinsed
  • 12 tablespoons Butter
  • Salt, to taste
  • Pepper, to taste
  • Optional: Splash of milk or cream
  • Optional: Grated cheese
  • Optional: Fresh herbs (chives or parsley)

Instructions

  1. Clean mushrooms, slice them, and rinse spinach. Crack eggs into a bowl, add salt and pepper, and whisk.
  2. Melt butter in a skillet, add sliced mushrooms and salt, and sauté until golden brown, about 5-7 minutes.
  3. Toss in spinach and stir until wilted, about 1-2 minutes.
  4. Pour whisked eggs over the mixture and let sit for a few seconds, then gently stir.
