- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 cups long-grain white rice
- 1 onion, diced
- 3 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 4 cups chicken broth
- 1/4 cup chopped fresh parsley
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a large skillet or Dutch oven, heat 1 tablespoon of oil over medium-high heat. Add the chicken and cook, stirring occasionally, until browned on all sides, about 5 minutes. Remove the chicken from the pan and set aside.
- Reduce the heat to medium, add the onion to the pan, and cook for 3-4 minutes, until translucent. Add the garlic and cook for 1 minute, until fragrant.
- Stir in the cumin, paprika, cinnamon, and cayenne. Cook for 1 minute, until the spices are fragrant.
- Add the rice and chicken broth to the pan. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, until the rice is tender and the liquid is absorbed.
- Stir the cooked chicken back into the pan, along with the parsley and lemon juice. Season with salt and pepper to taste.
- Serve the Moroccan Chicken Rice hot, garnished with additional parsley if desired.
