- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 8 oz fresh mushrooms, sliced
- 1 cup bamboo shoots, sliced
- 1 cup water chestnuts, sliced
- 2 cloves garlic, minced
- 1 tbsp grated ginger
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp cornstarch
- 1/4 cup low-sodium chicken broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet or wok over high heat.
- Add the chicken and stir-fry for 3-4 minutes until lightly browned.
- Add the mushrooms, bamboo shoots, and water chestnuts to the skillet. Stir-fry for an additional 2-3 minutes.
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, cornstarch, and chicken broth.
- Add the garlic and ginger to the skillet and cook for 1 minute, until fragrant.
- Pour the sauce mixture into the skillet and bring to a simmer. Cook for 2-3 minutes, stirring frequently, until the sauce has thickened.
- Season with salt and pepper to taste.
- Serve the Moo Goo Gai Pan over steamed rice, if desired.
