  • 1 cup bamboo shoots, sliced
  • 1 cup water chestnuts, sliced
  • 2 cloves garlic, minced
  • 1 tbsp grated ginger
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • 1/4 cup low-sodium chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over high heat.
  2. Add the chicken and stir-fry for 3-4 minutes until lightly browned.
  3. Add the mushrooms, bamboo shoots, and water chestnuts to the skillet. Stir-fry for an additional 2-3 minutes.
