- 2¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 2 teaspoons pure vanilla extract
- 1 tablespoon finely grated lemon zest
- ½ cup freshly squeezed lemon juice
- 1 cup full-fat sour cream
- 1½ cups powdered sugar
- 3–4 tablespoons fresh lemon juice
- 1 teaspoon finely grated lemon zest
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a bundt pan. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time until fully incorporated. Stir in vanilla extract and 1 tablespoon of lemon zest.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Alternately add dry ingredients and a mixture of sour cream and lemon juice to the butter mixture, beginning and ending with dry ingredients. Mix until just combined, do not overmix.
- Pour batter into the prepared bundt pan and spread evenly. Bake for 45-55 minutes, or until a wooden skewer inserted into the thickest part comes out clean.
- Let the cake cool in the pan for 10-15 minutes before inverting onto a wire rack to cool completely.
- While the cake cools, prepare the glaze by whisking together powdered sugar and 3-4 tablespoons of lemon juice until desired consistency is reached. Stir in the remaining 1 teaspoon of lemon zest.
- Once the cake is completely cool, drizzle the glaze over the top, allowing it to drip down the sides. Let the glaze set before slicing and serving.
