- 200g unsalted butter
- 200g semi-sweet chocolate
- 150g granulated sugar
- 100g brown sugar
- 3 large eggs
- 1 tsp vanilla extract
- 120g all-purpose flour
- 30g cocoa powder
- 1/2 tsp salt
- 150g Mint Aero chocolate bars
- 100g sweetened condensed milk
- 1/2 tsp mint extract
Instructions
- Preheat oven to 175°C (350°F) and line an 8×8-inch baking pan with parchment paper.
- Melt butter and semi-sweet chocolate together until smooth, then let cool slightly.
- Whisk granulated sugar, brown sugar, and eggs until thick and glossy.
- Mix in melted chocolate and vanilla extract until combined.
- Sift in flour, cocoa powder, and salt, then gently fold into the batter.
- Pour half of the batter into the prepared pan and spread evenly.
- Layer Mint Aero chocolate pieces evenly over the batter.
- Drizzle sweetened condensed milk and add mint extract if using.
- Spread remaining batter carefully over the mint layer.
- Bake for 25–30 minutes until edges are set and center is slightly soft.
- Cool completely before slicing into squares and serving.
