Mini Beef Wellington bites are an elegant, crowd-pleasing appetizer made with tender beef, savory mushroom duxelles, and flaky puff pastry.
Ingredients

- Beef tenderloin or steak, cut into small cubes
- Salt
- Black pepper
- Olive oil
- Mushrooms, finely chopped
- Garlic, minced
- Onion or shallot, finely chopped
- Butter
- Fresh thyme or herbs (optional)
- Puff pastry, thawed but cold
- Egg, beaten (for egg wash)
- Dijon mustard (optional)
Instructions
- Cook chopped mushrooms, garlic, and onion in butter until all moisture evaporates and mixture is thick. Let cool completely.
- Season beef with salt and pepper. Sear quickly in hot oil until browned outside but still rare inside. Cool.
- Cut puff pastry into squares. Spread mustard if using, add mushroom filling, top with beef, and wrap pastry to seal.
- Place seam-side down on baking sheet and brush with beaten egg.
- Bake until puffed, golden, and crisp.
- Let cool briefly before serving.
