Mexican Street Corn Pasta Salad is a vibrant, creamy pasta salad inspired by classic elote flavors. Made with tender pasta, sweet corn, zesty lime, and smoky spices.
Ingredients
- Pasta (such as rotini or penne)
- Corn (fresh, grilled, or canned)
- Red onion, finely diced
- Optional fresh herbs
- Mayonnaise
- Sour cream or Greek yogurt
- Fresh lime juice
- Chili powder
- Paprika
- Garlic powder
- Salt
- Black pepper
- Optional crumbled cheese or lime zest
Instructions
- Boil pasta in well-salted water until al dente. Drain and rinse under cold water to cool completely.
- If using fresh corn, cook or grill until tender and lightly charred. Cut kernels from the cob.
- Finely dice red onion and prepare any optional herbs.
- In a large bowl, whisk together mayonnaise, sour cream or yogurt, lime juice, and seasonings until smooth.
- Add cooled pasta, corn, and vegetables to the dressing. Toss gently until evenly coated.
- Refrigerate for at least 20 minutes before serving to allow flavors to meld.
