Description

Mexican Street Corn Pasta Salad is a vibrant, creamy pasta salad inspired by classic elote flavors. Made with tender pasta, sweet corn, zesty lime, and smoky spices.


Ingredients

  • Pasta (such as rotini or penne)
  • Corn (fresh, grilled, or canned)
  • Red onion, finely diced
  • Optional fresh herbs
  • Mayonnaise
  • Sour cream or Greek yogurt
  • Fresh lime juice
  • Chili powder
  • Paprika
  • Garlic powder
  • Salt
  • Black pepper
  • Optional crumbled cheese or lime zest

Instructions

  1. Boil pasta in well-salted water until al dente. Drain and rinse under cold water to cool completely.
  2. If using fresh corn, cook or grill until tender and lightly charred. Cut kernels from the cob.
  3. Finely dice red onion and prepare any optional herbs.
  4. In a large bowl, whisk together mayonnaise, sour cream or yogurt, lime juice, and seasonings until smooth.
