  • 1 teaspoon ground cumin

  • 1 can (14.5 ounces) diced tomatoes (undrained)
  • 1 cup chicken or vegetable broth

Instructions

  1. Prep your veggies: Wash and peel the potatoes, then dice them into 1/2 to 3/4-inch cubes. Dice the onion, mince the garlic, and dice the bell pepper. Chop the cilantro.
  2. Sauté the aromatics: Heat the oil in a large skillet over medium heat. Add the diced onions and bell peppers, cooking for 5-7 minutes until softened. Add the minced garlic and cook for another minute.
