- 12 pieces Corn tortillas

- 1 tbsp Olive oil
- Fresh cilantro
- Sour cream or Greek yogurt
- Sliced jalapeños
- Avocado slices
Instructions
- Preheat the oven to 375°F and grease a 9×13 inch baking dish.
- Cut the corn tortillas into 1-inch strips and dice the bell peppers.
- Heat the olive oil in a skillet over medium heat, and sauté the ground turkey for about 8-10 minutes until browned.
- Add taco seasoning and taco sauce to the turkey, cooking for an additional 2-3 minutes.
- Warm the refried beans in a saucepan with a bit of water, until smooth and creamy.
- Layer in the baking dish: start with a thin layer of refried beans, followed by half the tortilla strips, then the meat mixture, diced bell peppers, and 1.75 cups of cheese.
- Repeat the layers again, finishing with the shredded cheese on top.
- Bake the casserole uncovered for 30-40 minutes until the cheese is melted and bubbly.
- Cool for 5-10 minutes before serving, and top with fresh toppings.
