Ingredients
- Flour tortillas
- Fresh spinach
- Feta cheese, crumbled
- Mozzarella cheese, shredded
- Red onion, thinly sliced
- Olive oil
- Salt, to taste
- Black pepper, to taste
- Olives
- Sun-dried tomatoes
- Dried oregano or basil
Instructions
- Heat olive oil in a skillet over medium heat. Add red onion and cook until softened and lightly golden.
- Add spinach to the skillet and cook just until wilted. Season with salt and black pepper, then remove from heat.
- Lay a tortilla flat and sprinkle mozzarella over half. Add spinach-onion mixture and top with crumbled feta.
- Fold tortilla over filling and press gently.
- Heat a clean skillet with a little olive oil. Cook quesadilla over medium heat until golden and crisp, then flip and cook until cheese melts.
- Rest briefly, slice, and serve warm with dips or sides.
