Description

Mediterranean Quesadillas with Spinach, Feta, and Mozzarella are a fresh, flavorful twist on a classic favorite. Crispy tortillas are filled with wilted spinach, tangy feta, melty mozzarella, and sweet red onion for a light yet satisfying meal.


Ingredients

  • Flour tortillas
  • Fresh spinach
  • Feta cheese, crumbled
  • Mozzarella cheese, shredded
  • Red onion, thinly sliced
  • Olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Olives
  • Sun-dried tomatoes
  • Dried oregano or basil

Instructions

  1. Heat olive oil in a skillet over medium heat. Add red onion and cook until softened and lightly golden.
  2. Add spinach to the skillet and cook just until wilted. Season with salt and black pepper, then remove from heat.
  3. Lay a tortilla flat and sprinkle mozzarella over half. Add spinach-onion mixture and top with crumbled feta.
  4. Fold tortilla over filling and press gently.
  5. Heat a clean skillet with a little olive oil. Cook quesadilla over medium heat until golden and crisp, then flip and cook until cheese melts.
  6. Rest briefly, slice, and serve warm with dips or sides.
