- 8 pieces chicken thighs

- a few tablespoons olive oil
- 1.5 pounds potatoes
- 1 pint cherry or grape tomatoes
- 10 ounces roasted red peppers
- 0.25 cup capers
- 8 cloves garlic
- 5 sprigs fresh oregano
- 3 tablespoons parsley
Instructions
- Preheat oven to 400°F (200°C).
- Rinse chicken thighs under cold water and pat dry with paper towels. Generously season both sides with salt and pepper.
- Place a roasting pan over medium-high heat. Add olive oil.
- Carefully place chicken thighs skin-side down into the hot roasting pan. Sear until lightly golden (about 5-7 minutes). Flip chicken and turn off heat.
- Add potatoes, tomatoes, roasted red peppers, capers, garlic, and fresh oregano to the roasting pan. Season with more salt and pepper and drizzle more olive oil.
- Transfer the pan to the preheated oven and roast for 45-55 minutes until chicken is golden and cooked through, while potatoes become tender.
- Sprinkle with fresh parsley and serve warm.
