Ingredients

- 1 cup cooked chicken, shredded
- 1/2 cup hummus
- 1/2 cup cooked quinoa
- 1/4 cup cucumber, chopped
- 1/4 cup tomatoes, chopped
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, halved
- 2 tablespoons feta cheese, crumbled
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Prepare the quinoa according to package directions.
- In a bowl, combine the cooked quinoa, shredded chicken, cucumber, tomatoes, red onion, and olives.
- Add the hummus to the bowl.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Drizzle the dressing over the bowl and toss gently.
- Top with feta cheese.
- Serve immediately.
