Description

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small pita breads
  • For the Creamy Feta Tzatziki:
  • 1 cup plain Greek yogurt
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped cucumber
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Optional Toppings: sliced tomatoes, red onion, Kalamata olives

Instructions

  1. In a bowl, combine chicken pieces, olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Toss to coat the chicken evenly. Let marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  2. While the chicken marinates, prepare the creamy feta tzatziki. In a separate bowl, mix together Greek yogurt, crumbled feta cheese, chopped cucumber, fresh dill, minced garlic, and lemon juice. Season with salt and pepper to taste. Stir well and refrigerate until ready to serve.
  3. Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken in a single layer, working in batches if necessary to avoid overcrowding the pan.
  4. Cook the chicken for 5-7 minutes per side, or until cooked through and nicely browned.
  5. Warm the pita breads according to package directions.
  6. To assemble the Mediterranean chicken gyros, spread a generous amount of the creamy feta tzatziki sauce onto each warm pita.
  7. Top with the cooked Mediterranean chicken.
  8. Add your desired optional toppings such as sliced tomatoes, red onion, or Kalamata olives.
  9. Fold the pita in half to create your chicken gyro. Serve immediately.
