- 2 flatbreads
- 1 cup cooked chicken, shredded
- 1/3 cup basil pesto
- 1 cup shredded mozzarella cheese
- 1/2 cup feta cheese, crumbled
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/3 cup Kalamata olives, halved
- 1 tablespoon olive oil
- 1 tablespoon fresh parsley, chopped
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 400°F.
- Place the flatbreads on a baking sheet or pizza pan.
- Spread the basil pesto evenly over each flatbread.
- Sprinkle the mozzarella cheese over the pesto.
- Divide the cooked chicken evenly over the flatbreads.
- Top with cherry tomatoes, red onion, and Kalamata olives.
- Crumble feta cheese over the top.
- Drizzle lightly with olive oil and season with black pepper.
- Bake for 10 to 14 minutes, until the cheese is melted and the edges are golden.
- Remove from the oven and sprinkle with fresh parsley.
- Slice and serve warm.
