- 2 cloves garlic, minced
- 1/2 onion, finely chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp oil
- 1/2 onion, chopped
- 8 oz cremini or button mushrooms, sliced
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 2 cups beef broth
- 3/4 cup sour cream
- 8 oz egg noodles
- 2 tbsp fresh parsley, chopped
Instructions
- In a large bowl, combine ground beef, ground pork, breadcrumbs, egg, garlic, onion, salt, and pepper. Mix gently until just combined.
- Form mixture into 1 to 1.5-inch meatballs. Set aside.
- Heat oil in a large skillet over medium-high heat. Brown meatballs in batches, turning until seared on all sides. Remove and set aside.
- In the same skillet, add a bit more oil if needed. Sauté the mushrooms and chopped onion for 5–7 minutes until soft and golden.
- Stir in Dijon mustard and Worcestershire sauce. Pour in the beef broth and bring to a simmer.
- Return meatballs to the skillet. Cover and simmer for 10 minutes until meatballs are cooked through.
