  • 1 teaspoon vanilla extract (5 g)
  • 1/4 cup vegetable oil (50 g)
  • 2 cups heavy whipping cream (473 ml, divided)
  • 1 1/2 cups white chocolate (250 g, melted)
  • 1 1/2 tablespoons matcha powder (8 g)

Instructions

  1. Preheat your oven to 350°F (176°C) and prepare three 6-inch cake pans by lining the bottoms with round parchment paper.
  2. In a large mixing bowl, sift together the cake flour, matcha powder, and baking powder. Whisk gently to combine, then set aside.
  3. In another bowl, beat the egg whites until foamy. Add cream of tartar and continue to beat on high until pale and frothy. Gradually add 1/3 of the sugar until you reach stiff peaks.
  4. In another bowl, beat the egg yolks with the remaining 2/3 of the sugar, salt, milk, and vanilla until fluffy and pale yellow.
  5. Gently fold the dry ingredient mixture into the egg yolk mixture in three parts without over-mixing.
  6. Mix a few spoonfuls of the egg yolk mixture with the vegetable oil, then blend it back into the egg yolk mixture.
  7. Carefully fold the egg white mixture into the egg yolk batter in three parts, using an upward motion until no streaks remain.
  8. Divide the batter evenly among the three prepared pans and bake for 18-20 minutes or until a toothpick comes out clean.
  9. In a small saucepan, heat 1 cup of heavy cream until steaming, then whisk in the matcha powder.
  10. Melt the white chocolate for a luxurious touch in your whipped cream.
