- 1/4 teaspoon salt (1 g)
- 1/3 cup milk (80 ml)
- 1 teaspoon vanilla extract (5 g)
- 1/4 cup vegetable oil (50 g)
- 2 cups heavy whipping cream (473 ml, divided)
- 1 1/2 cups white chocolate (250 g, melted)
- 1 1/2 tablespoons matcha powder (8 g)
Instructions
- Preheat your oven to 350°F (176°C) and prepare three 6-inch cake pans by lining the bottoms with round parchment paper.
- In a large mixing bowl, sift together the cake flour, matcha powder, and baking powder. Whisk gently to combine, then set aside.
- In another bowl, beat the egg whites until foamy. Add cream of tartar and continue to beat on high until pale and frothy. Gradually add 1/3 of the sugar until you reach stiff peaks.
- In another bowl, beat the egg yolks with the remaining 2/3 of the sugar, salt, milk, and vanilla until fluffy and pale yellow.
- Gently fold the dry ingredient mixture into the egg yolk mixture in three parts without over-mixing.
- Mix a few spoonfuls of the egg yolk mixture with the vegetable oil, then blend it back into the egg yolk mixture.
- Carefully fold the egg white mixture into the egg yolk batter in three parts, using an upward motion until no streaks remain.
- Divide the batter evenly among the three prepared pans and bake for 18-20 minutes or until a toothpick comes out clean.
- In a small saucepan, heat 1 cup of heavy cream until steaming, then whisk in the matcha powder.
- Melt the white chocolate for a luxurious touch in your whipped cream.
