Description

A delicious layered breakfast dish combining crispy bacon, fluffy scrambled eggs, melty cheese, and a subtle maple syrup sweetness, perfect for brunch or weekend mornings.


Ingredients

  • 12 slices thick-cut bacon (maple-cured bacon recommended)
  • 10 large eggs (room temperature)
  • ½ cup (120 ml) whole milk or 2%
  • ⅓ cup (80 ml) real maple syrup
  • 2 cups (200 g) shredded cheese (sharp cheddar and mozzarella combo)
  • 9 sheets lasagna noodles, cooked al dente
  • 2 tablespoons (28 g) butter
  • Salt and pepper to taste
  • Optional add-ins: chopped green onions, sautéed mushrooms, diced bell peppers

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy but not burnt, about 8-10 minutes, flipping halfway. Drain on paper towels and chop into bite-sized pieces once cooled.
  2. Bring a large pot of salted water to a boil. Cook lasagna noodles until al dente, about 8 minutes. Drain and rinse under cold water to prevent sticking. Lay flat on parchment or a clean towel.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper. Melt butter in a skillet over medium-low heat. Pour in eggs and cook gently, stirring slowly until just set and creamy. Remove from heat.
  4. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  5. Assemble the lasagna layers: Pour about 2 tablespoons maple syrup on the bottom of the dish. Layer 3 noodles, half the scrambled eggs, ⅓ of the chopped bacon, ⅓ of the shredded cheese, and drizzle 2 tablespoons maple syrup. Repeat layers: noodles, eggs, bacon, cheese, maple syrup. Finish with noodles, remaining cheese, bacon, and a final drizzle of maple syrup on top.
  6. Cover loosely with foil and bake for 25-30 minutes until cheese is melted and bubbly. Remove foil for the last 10 minutes to brown edges slightly.
  7. Let the lasagna rest for 10 minutes before slicing to help it set and make serving easier.
