- 12 slices thick-cut bacon (maple-cured bacon recommended)
- 10 large eggs (room temperature)
- ½ cup (120 ml) whole milk or 2%
- ⅓ cup (80 ml) real maple syrup
- 2 cups (200 g) shredded cheese (sharp cheddar and mozzarella combo)
- 9 sheets lasagna noodles, cooked al dente
- 2 tablespoons (28 g) butter
- Salt and pepper to taste
- Optional add-ins: chopped green onions, sautéed mushrooms, diced bell peppers
Instructions
- Cook the bacon in a skillet over medium heat until crispy but not burnt, about 8-10 minutes, flipping halfway. Drain on paper towels and chop into bite-sized pieces once cooled.
- Bring a large pot of salted water to a boil. Cook lasagna noodles until al dente, about 8 minutes. Drain and rinse under cold water to prevent sticking. Lay flat on parchment or a clean towel.
- In a large bowl, whisk together eggs, milk, salt, and pepper. Melt butter in a skillet over medium-low heat. Pour in eggs and cook gently, stirring slowly until just set and creamy. Remove from heat.
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
- Assemble the lasagna layers: Pour about 2 tablespoons maple syrup on the bottom of the dish. Layer 3 noodles, half the scrambled eggs, ⅓ of the chopped bacon, ⅓ of the shredded cheese, and drizzle 2 tablespoons maple syrup. Repeat layers: noodles, eggs, bacon, cheese, maple syrup. Finish with noodles, remaining cheese, bacon, and a final drizzle of maple syrup on top.
- Cover loosely with foil and bake for 25-30 minutes until cheese is melted and bubbly. Remove foil for the last 10 minutes to brown edges slightly.
- Let the lasagna rest for 10 minutes before slicing to help it set and make serving easier.
