Instructions

  1. Line a plate with paper towels and set aside. In a large Dutch oven over medium-high heat, cook the diced bacon for about 7-8 minutes until crispy, flipping halfway through. Remove the bacon from the pan and set aside on the paper towels to drain excess fat.
  2. Using the bacon fat remaining in the pan, add the diced onions, carrots, and celery. Cook over medium heat until the vegetables soften, about 5 minutes. Add the minced garlic and cook for about 1 minute until fragrant, stirring often to prevent burning.
  3. Pour in the clam juice, diced tomatoes, tomato paste, and cubed potatoes. Season the mixture with red chili flakes (if using), salt, and freshly ground black pepper. Bring the mixture to a boil, then reduce heat to low and cover the pot. Let simmer until the potatoes are tender, about 15-20 minutes, checking by piercing them with a paring knife.
  4. Add the cooked bacon back into the pot along with the drained clams and heavy cream. Continue simmering uncovered for about 10 minutes to meld the flavors and slightly thicken the chowder.
