Instructions
- In a pot, cook the mangoes over medium heat until soft, then mash into a chunky sauce. Stir in sugar and simmer until it reaches a jam-like consistency. Cool and refrigerate.
- Rinse the sweet rice thoroughly, then soak it in hot water for 20 minutes. Drain and steam the rice until it’s just underdone, then mix in coconut milk and sweetened condensed milk for added creaminess.
- In a mixing bowl, cream the unsalted butter and sugars until fluffy. Beat in the egg yolk and vanilla, followed by the reserved coconut cream. Gradually mix in all-purpose flour, baking soda, and salt until smooth, then chill the dough for at least 30 minutes.
- Preheat your oven to 350°F (175°C). Scoop the chilled dough onto a lined baking sheet. Top each scoop with a dollop of mango jam and a bit of coconut sticky rice, gently swirling them together. Bake for 13-15 minutes until the edges are golden, adding sesame seeds halfway through baking.
- Allow the cookies to cool on a wire rack. If desired, sprinkle with flaky sea salt before serving for an extra burst of flavor.
