  • 2 large russet potatoes
  • 12 ounces (340g) steak (ribeye, sirloin, or flank steak)
  • 2 tablespoons olive oil or butter
  • Salt and black pepper to taste
  • 1 cup (110g) shredded cheddar cheese
  • ½ cup (120ml) sour cream
  • ½ cup (60g) bacon bits
  • 23 stalks green onions, sliced
  • 1 teaspoon garlic powder
  • Optional: jalapeños, fresh parsley, BBQ sauce

Instructions

  1. Preheat oven to 425°F (220°C). Scrub russet potatoes clean and poke a few times with a fork. Rub each potato with olive oil or butter and sprinkle with salt. Place on oven rack or baking sheet and bake for 50-60 minutes until skin is crispy and a fork pierces easily.
  2. While potatoes bake, bring steak to room temperature. Pat dry and season both sides generously with salt, pepper, and garlic powder.
  3. Heat cast iron skillet over medium-high heat until smoking hot. Add 1 tablespoon olive oil or butter. Sear steak without moving for 4-5 minutes, then flip and cook another 3-5 minutes for medium-rare (135°F/57°C internal temperature). Remove and rest covered loosely with foil for 5-10 minutes.
  4. Mix shredded cheddar, bacon bits, and sliced green onions in a bowl.
  5. Cut a slit down the center of each baked potato. Fluff insides gently with a fork to create a pocket. Spoon in sour cream, then pile on cheese, bacon, and green onion mixture.
  6. Slice rested steak thinly against the grain. Lay slices over loaded potato. Optionally drizzle with BBQ sauce or sprinkle fresh parsley.
  7. Serve warm and enjoy.
