- 1 lb russet or Yukon gold potatoes, peeled and diced
- 6 slices bacon, cooked and crumbled
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 tbsp butter
- 1/4 cup all-purpose flour
- 3 cups chicken broth
- 2 cups whole milk
- 1 cup heavy cream
- 1 1/2 cups shredded sharp cheddar cheese
- 1/2 cup sour cream
- Salt, to taste
- Black pepper, to taste
- 2 tbsp chopped fresh chives or green onions
Instructions
- Peel and dice the potatoes, chop the onion and chives, and mince the garlic. Grate the cheddar and cook bacon until crispy; crumble and set aside.
- In a large pot, melt butter with 1 tbsp reserved bacon fat. Add diced onion and cook until translucent. Stir in garlic and cook for 1 more minute.
- Sprinkle in flour to create a roux. Stir constantly for 2-3 minutes to eliminate raw flour taste.
- Gradually whisk in chicken broth, then milk and cream. Stir until smooth.
- Add potatoes and bring to a gentle boil. Reduce heat and simmer for 15-20 minutes until potatoes are fork-tender.
- Lightly mash some of the potatoes in the pot to thicken the soup while keeping some texture.
- Stir in sour cream and half of the cheddar cheese. Season with salt and pepper.
- Ladle into bowls and top with remaining cheese, crumbled bacon, and chives. Serve hot.

- This soup can be made ahead and stored in the refrigerator.
