A flavorful and satisfying chicken club sandwich loaded with crispy bacon, creamy avocado ranch, juicy grilled chicken, fresh veggies, and sharp cheddar cheese, all stacked between toasted bread.

- 2 large boneless, skinless chicken breasts (about 1 lb / 450g)
- 6 slices thick-cut bacon
- 1 large ripe avocado
- ½ cup buttermilk (120ml) or substitute with regular milk + 1 tbsp lemon juice
- ½ cup mayonnaise (120g)
- 1 tablespoon fresh lime juice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon fresh dill weed, chopped (or 1 teaspoon dried dill)
- Salt and pepper to taste
- 1 cup leafy lettuce (romaine or butter lettuce, about 30g)
- 1 medium tomato, sliced (about ½ cup / 75g)
- A few thin slices of red onion
- 4 slices cheddar cheese (optional but recommended)
- 8 slices good-quality sandwich bread (sourdough or sturdy white bread)
Instructions
- Preheat grill pan or cast iron skillet over medium-high heat. Season chicken breasts with salt and pepper and brush lightly with olive oil. Cook chicken for 5-6 minutes on each side until internal temperature reaches 165°F (74°C) and grill marks appear. Transfer to plate and let rest for 5 minutes before slicing thinly.
- While chicken rests, cook bacon in a skillet over medium heat for 7-8 minutes until crispy. Drain on paper towels. Optionally save some bacon grease for toasting bread.
- In a mixing bowl, mash avocado with a fork until smooth but slightly chunky. Add mayonnaise, buttermilk, lime juice, garlic powder, onion powder, chopped dill, salt, and pepper. Whisk until creamy and well combined. Adjust seasoning to taste.
- Toast bread slices until golden and crisp. Optionally spread bacon grease or butter on bread before toasting for extra flavor.
- Assemble sandwich by spreading a generous layer of avocado ranch on one slice of toasted bread. Layer lettuce, sliced chicken, tomato slices, red onion, bacon strips, and cheddar cheese. Top with another slice of bread. Repeat for second sandwich. Cut diagonally if desired.
