- 1½ cups (190g) all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon fine sea salt
- ¾ cup (150g) granulated sugar
- ⅓ cup (80ml) vegetable oil
- 2 tablespoons fresh lime juice
- 1 tablespoon lime zest
- 1 teaspoon vanilla extract
- 1 large egg, room temperature
- ½ cup (60g) powdered sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, whisk granulated sugar and vegetable oil until smooth. Add the egg, fresh lime juice, lime zest, and vanilla extract. Mix until well combined and fragrant.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
- Cover the dough with plastic wrap and chill in the refrigerator for about 30 minutes.
- Scoop tablespoon-sized portions of dough and roll into balls. Roll each ball generously in powdered sugar until coated.
- Place dough balls about 2 inches apart on the prepared baking sheet. Bake for 10-12 minutes until cookies have spread, cracked, and edges begin to turn golden.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
