Instructions

  1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 to 5 minutes. Beat in the egg until fully combined. Mix in the vanilla extract, lemon juice, and lemon zest.
  2. In a separate bowl, whisk together the flour, baking powder, salt, and baking soda. Gradually add the dry ingredients to the wet ingredients and mix on low speed until just combined. Do not overmix.
  3. Form the dough into a disc or log, wrap tightly in plastic wrap, and refrigerate for at least 2 hours, or preferably overnight.
  4. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper. Shape the chilled dough into 1-inch balls, flatten slightly, and place on prepared baking sheets, leaving about 2 inches between cookies.
  5. Bake for 9 to 12 minutes, or until the edges are lightly golden brown and the centers are set. Let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  6. To make the glaze, whisk together powdered sugar and lemon juice until smooth and pourable. Stir in a few drops of vanilla extract if desired. Adjust consistency with more lemon juice or powdered sugar as needed.
  7. Once cookies are completely cool, drizzle or dip them into the glaze. Allow the glaze to harden at room temperature for at least 30 minutes before storing in an airtight container.
