- 1 cup granulated sugar
- 1 large egg
- 2 tablespoons lemon zest (from about 2 medium lemons)
- 2 tablespoons fresh lemon juice
- 2 1/2 cups all-purpose flour

- 1/4 teaspoon salt
- 1 cup powdered sugar (for the glaze)
- 2 tablespoons fresh lemon juice (for the glaze)
- 1 tablespoon lemon zest (optional, for the glaze)
Instructions
- In a large mixing bowl, cream together the softened unsalted butter and granulated sugar using an electric mixer on medium-high speed for 3-5 minutes until light, fluffy, and pale yellow.
- Beat in the large egg until just combined. Add the 2 tablespoons of lemon zest and 2 tablespoons of fresh lemon juice, mixing on low speed until just incorporated. The mixture may look slightly curdled.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients in thirds, mixing on low speed until just incorporated after each addition, until a cohesive dough forms.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. Scoop the dough into balls (about 1.5 tablespoons each) and place them about 2 inches apart on the prepared baking sheets.
- Bake for 10-12 minutes, or until the edges are lightly golden brown and the centers appear set. Let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- While the cookies cool, prepare the glaze by whisking together 1 cup of powdered sugar, 2 tablespoons of fresh lemon juice, and the optional 1 tablespoon of lemon zest until smooth and pourable. Drizzle over the completely cooled cookies.
