  • 6 tablespoons Granulated Sugar
  • 1 teaspoon Lemon Zest
  • 1/4 cup Fresh Lemon Juice
  • Pinch of Salt
  • Fresh Berries, for garnish (optional)

Instructions

  1. Gather and measure all your ingredients. Measure out 1 pint of heavy cream, 6 tablespoons of granulated sugar, 1 teaspoon of lemon zest, 1/4 cup of fresh lemon juice, and a pinch of salt. Have fresh berries ready for garnish if desired.
  2. In a medium-sized saucepan over medium heat, combine the heavy cream, granulated sugar, and pinch of salt. Stir gently until the sugar is completely dissolved. Heat the cream to a gentle simmer, avoiding a vigorous boil, for about 5-7 minutes.
  3. Remove the saucepan from the heat and stir in the 1 teaspoon of lemon zest. Allow the zest to steep in the warm cream mixture for a few minutes to infuse the flavor.
  4. Gently re-warm the cream mixture if it has cooled too much, then pour in the 1/4 cup of fresh lemon juice. Stir thoroughly for about 30 seconds to a minute until the mixture thickens slightly.
  5. Carefully ladle or pour the thickened lemon cream mixture into small ramekins, teacups, or dessert glasses, filling them about ¾ full.
  6. Place the filled vessels on a tray and refrigerate, loosely covered with plastic wrap, for a minimum of 3-4 hours, or preferably overnight, until completely set.
  7. Serve chilled, directly from their containers or unmolded if desired. Garnish with fresh berries, a sprig of mint, or extra lemon zest for an elegant presentation.
