- 1 tablespoon Lemon Zest (from one lemon)
- 2 tablespoons Lemon Juice (from one lemon)
- 1 teaspoon Fine Salt
- 1 teaspoon Black Pepper
- 8 ounces Mozzarella Cheese (fresh or shredded)
- 1/2 cup Grated Parmesan Cheese (optional)
Instructions
- Prepare the Dough: Shape your pizza dough according to the no-knead recipe and preheat your oven to 450°F (230°C).
- Slice the Cheese: Slice fresh mozzarella into ½-inch thick pieces and pat dry with a paper towel.
- Shape the Dough: Press the dough into a 9×13 inch rectangle on parchment paper and transfer to a pizza peel.
- Mix the Brine: In a jar, combine olive oil, water, parsley, garlic, lemon zest, lemon juice, salt, and pepper. Shake to emulsify.
- Top the Pizza: Create dimples in the dough with fingers and pour the brine evenly over it. Lay mozzarella slices on top.
- Bake the Pizza: Slide into the oven and bake for 8-10 minutes until cheese is bubbly and crust is golden brown.
