  • 500g chicken fillet, cubed into bite-sized pieces
  • 2 tbsp lemon pepper seasoning
  • 1 red bell pepper, roasted and sliced into thin strips
  • 250g fettuccine pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • 1 tsp Cajun seasoning (adjust to your spice level)
  • 2 cloves garlic, minced
  • 2 tbsp olive oil (divided)
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Toss the cubed chicken with lemon pepper seasoning and 1 tablespoon of olive oil. Spread the chicken on a baking sheet and bake for about 20 minutes, or until golden and cooked through.
  3. While the chicken bakes, cook the fettuccine pasta according to package directions. Reserve about a cup of pasta water before draining.
  4. Heat the remaining olive oil in a pan over medium heat and sauté the minced garlic until fragrant (about 30 seconds).
  5. Pour in the heavy cream and let it simmer gently for a minute. Stir in the Parmesan cheese and Cajun seasoning until the cheese melts into a luscious sauce.
  6. Fold in the roasted red pepper strips. If the sauce is too thick, add a splash of pasta water to reach desired consistency.
  7. Add the cooked fettuccine to the sauce and toss to coat. Gently fold in the cooked lemon pepper chicken bites.
  8. Taste and adjust seasoning with salt and black pepper if needed.
  9. Serve hot, garnished with extra Parmesan cheese.
