- 2 tbsp lemon pepper seasoning
- 1 red bell pepper, roasted and sliced into thin strips
- 250g fettuccine pasta
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus extra for serving
- 1 tsp Cajun seasoning (adjust to your spice level)
- 2 cloves garlic, minced
- 2 tbsp olive oil (divided)
- Salt and black pepper, to taste
Instructions
- Preheat your oven to 200°C (400°F).
- Toss the cubed chicken with lemon pepper seasoning and 1 tablespoon of olive oil. Spread the chicken on a baking sheet and bake for about 20 minutes, or until golden and cooked through.
- While the chicken bakes, cook the fettuccine pasta according to package directions. Reserve about a cup of pasta water before draining.
- Heat the remaining olive oil in a pan over medium heat and sauté the minced garlic until fragrant (about 30 seconds).
- Pour in the heavy cream and let it simmer gently for a minute. Stir in the Parmesan cheese and Cajun seasoning until the cheese melts into a luscious sauce.
- Fold in the roasted red pepper strips. If the sauce is too thick, add a splash of pasta water to reach desired consistency.
- Add the cooked fettuccine to the sauce and toss to coat. Gently fold in the cooked lemon pepper chicken bites.
- Taste and adjust seasoning with salt and black pepper if needed.
- Serve hot, garnished with extra Parmesan cheese.
