Description

Lemon Herb Roasted Potatoes are crispy on the outside and fluffy on the inside, enhanced with zesty lemon and aromatic herbs.


Ingredients

  • 1 lb Baby potatoes
  • 1/4 cup Olive oil
  • 2 tablespoons Butter (melted)
  • 3 cloves Garlic (minced)
  • 1 tablespoon Italian parsley (chopped)
  • 1 tablespoon Lemon juice (freshly squeezed)
  • 1 tablespoon Honey
  • 1/4 teaspoon Salt
  • 3 dashes Ground black pepper

Instructions

  1. Preheat the oven to 350°F (176°C).
  2. Gently cut slits into each baby potato without cutting all the way through.
  3. In a bowl, combine olive oil, melted butter, minced garlic, chopped parsley, lemon juice, honey, salt, and black pepper. Whisk until well blended.
  4. Place the potatoes in a roasting pan and brush with the oil mixture. Massage some into the slits.
  5. Roast the potatoes for 1 hour, basting with the remaining oil mixture halfway through. Serve immediately.
