Description
Lemon Herb Roasted Potatoes are crispy on the outside and fluffy on the inside, enhanced with zesty lemon and aromatic herbs.
Ingredients

- 1 lb Baby potatoes
- 1/4 cup Olive oil
- 2 tablespoons Butter (melted)
- 3 cloves Garlic (minced)
- 1 tablespoon Italian parsley (chopped)
- 1 tablespoon Lemon juice (freshly squeezed)
- 1 tablespoon Honey
- 1/4 teaspoon Salt
- 3 dashes Ground black pepper
Instructions
- Preheat the oven to 350°F (176°C).
- Gently cut slits into each baby potato without cutting all the way through.
- In a bowl, combine olive oil, melted butter, minced garlic, chopped parsley, lemon juice, honey, salt, and black pepper. Whisk until well blended.
- Place the potatoes in a roasting pan and brush with the oil mixture. Massage some into the slits.
- Roast the potatoes for 1 hour, basting with the remaining oil mixture halfway through. Serve immediately.
