Description

Golden-crusted chicken meets the bright tang of fresh lemon and briny capers in this restaurant-quality dish.


Ingredients

  • 1.5 pounds boneless skinless chicken breasts pounded to 1/2” thickness
  • Sea salt to taste
  • Black pepper to taste
  • 3 tablespoons blanched almond flour
  • 2 tablespoons tapioca flour
  • 3 tablespoons ghee divided
  • 4 cloves garlic minced
  • 1 small onion chopped
  • 1 cup chicken broth
  • 3 tablespoons fresh lemon juice
  • 1/3 cup coconut cream unsweetened, blended before using
  • 1 1/2 teaspoon dijon mustard optional
  • 3 tablespoons capers drained

Instructions

  1. Pat the chicken breasts dry and season both sides with sea salt and black pepper. Dredge in almond flour and tapioca flour, shaking off excess.
  2. Heat 2 tablespoons of ghee in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side until golden brown and cooked through. Transfer to a plate and tent with foil.
  3. Add the remaining 1 tablespoon of ghee to the skillet. Add garlic and onion, cooking for 2-3 minutes until fragrant and translucent.
  4. Pour in the chicken broth and fresh lemon juice, scraping up browned bits from the pan. Simmer for 3-4 minutes until slightly reduced.
  5. Whisk in blended coconut cream and Dijon mustard (if using) until smooth and creamy.
  6. Stir in drained capers and return the chicken to the skillet. Simmer for 2-3 minutes, spooning sauce over the chicken.
  7. Taste and adjust seasoning with additional salt, pepper, or lemon juice.
  8. Serve immediately, spooning extra sauce over each portion.
