Description
Golden-crusted chicken meets the bright tang of fresh lemon and briny capers in this restaurant-quality dish.
Ingredients

- 1.5 pounds boneless skinless chicken breasts pounded to 1/2” thickness
- Sea salt to taste
- Black pepper to taste
- 3 tablespoons blanched almond flour
- 2 tablespoons tapioca flour
- 3 tablespoons ghee divided
- 4 cloves garlic minced
- 1 small onion chopped
- 1 cup chicken broth
- 3 tablespoons fresh lemon juice
- 1/3 cup coconut cream unsweetened, blended before using
- 1 1/2 teaspoon dijon mustard optional
- 3 tablespoons capers drained
Instructions
- Pat the chicken breasts dry and season both sides with sea salt and black pepper. Dredge in almond flour and tapioca flour, shaking off excess.
- Heat 2 tablespoons of ghee in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side until golden brown and cooked through. Transfer to a plate and tent with foil.
- Add the remaining 1 tablespoon of ghee to the skillet. Add garlic and onion, cooking for 2-3 minutes until fragrant and translucent.
- Pour in the chicken broth and fresh lemon juice, scraping up browned bits from the pan. Simmer for 3-4 minutes until slightly reduced.
- Whisk in blended coconut cream and Dijon mustard (if using) until smooth and creamy.
- Stir in drained capers and return the chicken to the skillet. Simmer for 2-3 minutes, spooning sauce over the chicken.
- Taste and adjust seasoning with additional salt, pepper, or lemon juice.
- Serve immediately, spooning extra sauce over each portion.
Notes
- This dish can be served with crusty bread or over fluffy rice.
