Leftover Mashed Potato Cheese Puffs are a delightful way to use up leftover mashed potatoes. They are crispy on the outside and cheesy on the inside.

- 2 cups leftover mashed potatoes
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 1 large egg
- 1/2 cup all-purpose flour
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- Oil for frying (or cooking spray for baking)
Instructions
- In a large bowl, combine leftover mashed potatoes, shredded cheese, and the egg. Mix well until all ingredients are thoroughly incorporated.
- Sprinkle in the flour, garlic powder, onion powder, salt, and pepper. Stir until well combined. The mixture should be thick enough to hold its shape.
- Using your hands or a spoon, scoop out small portions of the mixture and shape them into balls or patties, depending on your preference.
- In a large skillet, heat oil over medium heat. If you prefer baking, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- For frying: Carefully place formed puffs into the hot oil, cooking until golden brown on all sides (about 3-4 minutes per side). For baking: Place puffs on the prepared baking sheet and lightly spray with cooking spray. Bake for about 20 minutes or until golden and crispy.
- If frying, remove puffs from the skillet and place them on paper towels to drain any excess oil.
- These puffs are best enjoyed warm, right out of the fryer or oven.
