Ingredients

- 1 teaspoon salt
- 2 cups neutral oil (such as sunflower or canola)
- 1/4 cup fresh lemon juice
- 2–4 tablespoons ice water
Instructions
- Place peeled garlic cloves and salt into a food processor. Blend until finely minced and smooth.
- With the processor running, slowly drizzle in oil in a thin, steady stream to allow proper emulsification.
- Alternate adding small amounts of lemon juice with more oil while continuing to blend slowly.
- Add ice water one tablespoon at a time to stabilize and lighten the sauce.
- Continue processing until the mixture becomes thick, pale, and fluffy.
- Transfer to a container and refrigerate for at least 1 hour before serving.
