- 1 tablespoon olive oil
- 1 pound Italian sausage
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 can (28 ounces) crushed tomatoes
- 4 cups chicken broth
- 1 tablespoon Italian seasoning
- 8 ounces pasta (broken lasagna noodles or tortellini)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup ricotta cheese (for topping)
- ½ cup grated parmesan cheese (for topping)
- 2 tablespoons chopped fresh basil or parsley (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add Italian sausage, breaking it up as it browns.
- Once partially cooked, add the chopped onion and sauté until softened and sausage is fully browned.
- Stir in minced garlic and tomato paste; cook for about 1 minute until fragrant.
- Add crushed tomatoes and chicken broth. Stir in Italian seasoning, salt, and pepper. Bring to a boil.
- Add pasta and reduce heat to a simmer. Cook until pasta is tender (10 minutes or per package).
- Taste the broth and adjust seasoning as needed.
- Serve in bowls with a dollop of ricotta, sprinkle of parmesan, and fresh basil or parsley.
