  • 2 cups carrots, sliced
  • 1 large onion, sliced
  • 1 cup mushrooms, sliced
  • 2 green onions, chopped (for garnish)
  • 1 tablespoon cornstarch (optional, for thickening)
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and prep them, including mincing garlic and ginger, and slicing the vegetables.
  2. Heat a large skillet over medium-high heat. Season the beef chuck roast with salt and pepper. Sear it on all sides until browned, about 3-4 minutes per side.
  3. In a bowl, mix together soy sauce, brown sugar, sesame oil, minced garlic, and ginger.
  4. Place the seared roast into a slow cooker or a pot. Pour the marinade over the meat, followed by the beef broth.
  5. Arrange the sliced onions, carrots, and mushrooms around the roast.
  6. Slow Cooker: Cover and cook on low for 6-8 hours, or on high for 4-5 hours. Oven: Preheat to 300°F (150°C). Cover the pot and bake for 3 hours or until the meat is fork-tender. Pressure Cooker: Cook on high pressure for about 60-70 minutes, then allow natural release.
  7. Ensure the meat is tender and easily pulls apart with a fork.
  8. If you desire a thicker sauce, mix cornstarch with a little water to create a slurry. Stir it into the cooking liquid and let it simmer until thickened.
