- 1 cup Almond Milk (or any nut or oat milk)
- 1/4 cup Chia Seeds (provides a creamy base)
- 2 tablespoons Maple Syrup (or honey/agave syrup)
- 1 cup Cashews (soaked for at least 4 hours)
- 1/2 cup Coconut Milk (preferably full-fat)
- 2 tablespoons Lime Juice (use key limes for best taste)
- 1 tablespoon Lime Zest (enhances flavor)
- 1 teaspoon Matcha Powder (optional)
Instructions
- In a medium bowl, combine almond milk, chia seeds, and maple syrup. Whisk thoroughly until distributed. Cover and refrigerate for at least 2 hours.
- In a blender, combine soaked cashews, coconut milk, lime juice, lime zest, and matcha powder. Blend until smooth and creamy.
- Once the chia pudding has set, stir and divide between serving jars. Spoon the key lime mousse on top and return to the fridge for 2 hours.
- Garnish each dessert with lime zest and a slice of lime. Enjoy straight from the jars!
Notes
- For best results, use fresh key limes for the lime juice.
- Allow the pudding to set for longer if a thicker consistency is desired.
- Adjust sweetness to taste by adding more maple syrup if needed.
