  • 1 cup Cashews (soaked for at least 4 hours)
  • 1/2 cup Coconut Milk (preferably full-fat)
  • 2 tablespoons Lime Juice (use key limes for best taste)
  • 1 tablespoon Lime Zest (enhances flavor)
  • 1 teaspoon Matcha Powder (optional)

Instructions

  1. In a medium bowl, combine almond milk, chia seeds, and maple syrup. Whisk thoroughly until distributed. Cover and refrigerate for at least 2 hours.
  2. In a blender, combine soaked cashews, coconut milk, lime juice, lime zest, and matcha powder. Blend until smooth and creamy.
  3. Once the chia pudding has set, stir and divide between serving jars. Spoon the key lime mousse on top and return to the fridge for 2 hours.
  4. Garnish each dessert with lime zest and a slice of lime. Enjoy straight from the jars!
